Crispy air fryer eggplant parmesan stacks with golden panko-Parmesan crust, rich marinara and bubbly mozzarella – vegetarian comfort food without deep frying.

Ingredients

  • For the crispy eggplant:
  • 1 large eggplant (about 500 g / 1 lb), cut into ½-inch (1.5 cm) thick rounds

  • ½ teaspoon salt, for sweating the eggplant

  • 1 egg, beaten

  • 1 cup panko breadcrumbs

  • ½ cup grated Parmesan cheese

  • 1 teaspoon dried Italian herbs

  • Black pepper, to taste

  • Cooking spray or olive oil spray

  • For the layers:
  • 1 cup tomato marinara sauce

  • 1 cup shredded mozzarella cheese

  • Fresh basil leaves

  • Arugula, for serving

Directions

  • Prepare the eggplant
Sprinkle the eggplant rounds with salt and let them rest for 15 minutes. Pat them very dry with paper towels – this removes bitterness and excess moisture.
  • Set up the breading
Place the beaten egg in a shallow bowl. In a second bowl, mix the panko breadcrumbs, grated Parmesan, Italian herbs and a pinch of black pepper.
  • Bread the eggplant
Dip each eggplant round in the egg, then press it into the panko-Parmesan mixture on both sides so the coating sticks well.
  • Air fry until crispy
Preheat the air fryer to 400°F (200°C). Place the slices in a single layer, spray lightly with oil and air fry for 8–10 minutes, turning halfway, until golden and crispy. Cook in batches if needed.
  • Build the stacks
Place a crispy eggplant round on a piece of parchment in the air fryer basket. Top with a spoonful of marinara and some mozzarella, then add another slice. Repeat to make stacks of 3 layers, finishing with sauce and mozzarella.
  • Melt the cheese and serve
Air fry at 350°F (175°C) for 4–5 minutes until the mozzarella is melted and bubbly. Top with fresh basil and serve with arugula.

Notes

  • Do not skip salting and drying the eggplant – it makes the slices crispier and less watery.
  • Cut the eggplant evenly, about ½ inch (1.5 cm) thick, so every slice cooks at the same time.
  • Use parchment paper or a small air fryer-safe dish when melting the cheese so the stacks are easy to lift out.
  • The crispy eggplant slices can be air fried ahead and assembled just before serving.

Why You’ll Love This Air Fryer Eggplant Parmesan

Traditional eggplant parmesan means frying slice after slice in hot oil. Making eggplant parmesan in the air fryer gives you the same golden, crunchy coating with just a light spray of oil, and the stacks look beautiful on the plate.

It is a hearty meatless dinner that even non-vegetarians love, and the crispy eggplant slices are also delicious on their own as a snack with marinara for dipping.

Tips for Extra Crispy Eggplant

Salt and dry the slices. Salting draws out moisture and bitterness. Pat the eggplant completely dry before breading.

Press the coating on. Firmly pressing the panko-Parmesan mixture onto the slices helps it stay put and turn golden.

Do not overcrowd. Air fry the slices in a single layer, in batches if needed, so the hot air can crisp every side.

How to Choose the Right Eggplant

Look for a firm, glossy eggplant that feels heavy for its size, with smooth skin and a green stem. Medium to large globe eggplants are perfect for stacks because they give wide, even rounds. You do not need to peel them – the skin helps the slices hold their shape.

Make-Ahead Tips

Air fry the breaded eggplant slices up to a day ahead and store them in the fridge. Re-crisp them in the air fryer for 3–4 minutes, then assemble the stacks with sauce and cheese and melt the mozzarella just before serving.

Storage & Reheating

Store leftover air fryer eggplant parmesan in an airtight container in the refrigerator for up to 3 days. For general guidance, see the USDA guide to leftovers and food safety.

Reheat the stacks in the air fryer at 350°F (175°C) for 4–5 minutes until hot. The coating will soften a little under the sauce, which is completely normal.

Frequently Asked Questions

Do I have to salt the eggplant?

It is not strictly necessary, but salting removes excess water and any bitterness, which gives you a crispier, better-tasting result.

Can I make air fryer eggplant parmesan without egg?

Yes. Brush the slices with a little olive oil or mayonnaise instead of egg before pressing them into the breadcrumbs.

Can I make it gluten-free?

Use gluten-free panko or crushed gluten-free crackers for the coating and check that your marinara sauce is gluten-free.

Can I bake it as a casserole instead?

Yes. Layer the crispy slices with sauce and cheese in an air fryer-safe baking dish and air fry at 350°F (175°C) for 8–10 minutes until bubbly.

What to Serve with Eggplant Parmesan

Serve your air fryer eggplant parmesan stacks with a fresh arugula salad, garlic bread or a small portion of spaghetti with extra marinara. A simple tomato and mozzarella salad also pairs perfectly.

Easy Variations

Pesto layers: Spread a little basil pesto between the layers for extra flavor.

Ricotta filling: Add a spoonful of ricotta mixed with herbs to each layer, lasagna-style.

Spicy: Use a spicy arrabbiata sauce instead of marinara.
