minutesJuicy air fryer BBQ turkey meatballs with a sticky, smoky glaze, served with crispy baby potatoes and parmesan zucchini. A complete high-protein dinner from one air fryer basket in about 40 minutes.
Ingredients
- For the meatballs
500 g (1.1 lb) ground turkey
1 large egg
1/2 cup breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt and 1/4 teaspoon black pepper
1/2 cup BBQ sauce, divided
- For the sides
300 g (10 oz) baby potatoes, halved or quartered
1 zucchini, cut into thick half-moons
2 tablespoons grated Parmesan cheese
1 tablespoon olive oil
- To serve
Fresh parsley and sesame seeds
Directions
- Start the potatoes
Toss the potatoes with half of the olive oil, salt and pepper. Air fry at 400°F (200°C) for 10 minutes. - Mix the meatballs
In a bowl, gently mix the turkey, egg, breadcrumbs, garlic powder, smoked paprika, salt, pepper and 1 tablespoon of BBQ sauce. With wet hands, roll the mixture into about 12 meatballs. - Air fry the meatballs
Push the potatoes to one side of the basket and add the meatballs in a single layer. Air fry at 380°F (190°C) for 8 minutes. - Add the zucchini
Toss the zucchini with the remaining oil, a pinch of salt and the Parmesan. Turn the meatballs, brush them with BBQ sauce and add the zucchini to the basket. Air fry for another 5 to 6 minutes. - Glaze
Brush the meatballs with the remaining BBQ sauce and air fry for 2 more minutes until sticky. They are done when the center reaches 165°F (74°C). - Serve
Sprinkle the meatballs with sesame seeds and parsley and serve with the potatoes, zucchini and extra BBQ sauce.
Notes
- If your air fryer is small, cook the sides first and keep them warm, then cook the meatballs.
- Use 93% lean ground turkey. Extra-lean turkey dries out more easily.
- Brush on the BBQ sauce only in the last minutes, because the sugar in the sauce burns quickly.
- Leftover meatballs keep in the fridge for up to 4 days.
Julia’s Tip: Wet your hands with a little cold water before rolling the meatballs. The turkey mixture won’t stick to your fingers, and the meatballs come out smooth and evenly shaped.
One-Basket Dinner: The Timeline
The trick to this recipe is adding each part at the right moment, so everything finishes together:
- Minute 0: potatoes go in first, because they take the longest.
- Minute 10: add the meatballs next to the potatoes.
- Minute 18: turn and glaze the meatballs, add the zucchini.
- Minute 24: final glaze, 2 more minutes, and dinner is ready.
How to Keep BBQ Turkey Meatballs Juicy
Ground turkey is much leaner than beef or pork, so it can turn dry if you are not careful. These simple steps keep the meatballs tender:
- Choose 93% lean ground turkey instead of 99% extra-lean.
- Mix the meat gently and only until combined. Overworking makes the meatballs dense.
- The egg, breadcrumbs and a spoonful of BBQ sauce in the mixture add moisture.
- Use a meat thermometer and stop cooking at 165°F (74°C).
A Sticky BBQ Glaze Without Burning
Most BBQ sauces contain a lot of sugar, which caramelizes and burns quickly in the hot air of the air fryer. That is why the sauce is brushed on in two thin layers during the last 8 minutes instead of at the beginning. Each layer sets and turns sticky, and the result is a glossy, deeply flavored coating instead of a burnt crust. For extra shine, warm a few spoonfuls of sauce with a teaspoon of honey and brush it on right before serving.

Protein and Nutrition in BBQ Turkey Meatballs
With lean turkey as the base, one serving of this dinner has about 410 calories and roughly 30 grams of protein, plus a good portion of vegetables. It is a satisfying option if you are looking for high-protein meals that still feel like comfort food. For a lower-carb version, skip the potatoes and double the zucchini.
Meal Prep and Freezing BBQ Turkey Meatballs
BBQ turkey meatballs are great for meal prep. Divide the meatballs, potatoes and zucchini into containers and keep them in the fridge for up to 4 days. Reheat them in the air fryer at 350°F (180°C) for 4 to 5 minutes. To freeze, place the cooked meatballs on a tray, freeze until firm, then store them in a freezer bag for up to 3 months. Reheat from frozen for 8 to 10 minutes and brush with fresh sauce.
Variations
- Chicken: use ground chicken instead of turkey.
- Beef: ground beef makes richer, even juicier meatballs.
- Honey garlic glaze: swap the BBQ sauce for honey, soy sauce and garlic.
- Sweet potatoes: replace the baby potatoes with sweet potato cubes.
Frequently Asked Questions
Can I make BBQ turkey meatballs without breadcrumbs?
Yes. Use the same amount of rolled oats, almond flour or gluten-free panko. Oats also make the meatballs especially tender.
How do I know when the meatballs are done?
The center should reach 165°F (74°C) on a meat thermometer. Without a thermometer, cut one open: it should be white throughout with clear juices.
Which BBQ sauce works best?
Any thick, sweet and smoky BBQ sauce works. Thin, vinegar-based sauces will not create a sticky glaze.
Can I bake them in the oven?
Yes. Bake the potatoes at 425°F (220°C) for 15 minutes, then add the meatballs and zucchini and bake for 15 to 18 minutes more, glazing at the end.
