minutesA fluffy, high-protein air fryer cottage cheese omelette with spinach and tomatoes, served with crispy salmon fingers, a fresh salad and a creamy garlic herb dip.
Ingredients
- For the cottage cheese omelette:
3 eggs
150 g (⅔ cup) cottage cheese
1 handful baby spinach (about 30 g / 1 oz)
6 cherry tomatoes, halved
¼ cup shredded mozzarella cheese
Salt, black pepper and chili flakes, to taste
Cooking spray, for the ramekin
- For the salmon:
2 breaded salmon fingers (store-bought or homemade)
- For the salad:
1 large handful arugula
½ cucumber, cut into ribbons
¼ red onion, thinly sliced
Juice of ½ lemon
1 teaspoon olive oil
- For the garlic herb dip:
⅓ cup Greek yogurt
1 small garlic clove, grated
1 tablespoon fresh herbs (dill, chives or parsley), chopped
Lemon wedges, for serving
Directions
- Make the dip
Mix the Greek yogurt with the grated garlic, chopped herbs and a pinch of salt. Chill until serving. - Prepare the omelette
Whisk the eggs with the cottage cheese, salt, black pepper and a pinch of chili flakes. Stir in the baby spinach. Pour the mixture into a greased oven-safe ramekin (about 6 inches / 15 cm) and top with the cherry tomatoes and mozzarella. - Air fry the omelette
Place the ramekin in the air fryer basket and air fry at 330°F (165°C) for 14–16 minutes, until puffed, golden and set in the center. - Air fry the salmon fingers
Add the salmon fingers to the basket next to the ramekin for the last 8–10 minutes (from frozen) and turn them halfway, or cook them separately at 400°F (200°C) for 8–10 minutes until crispy and hot inside. - Toss the salad
Toss the arugula, cucumber ribbons and red onion with lemon juice, olive oil and a pinch of salt. - Serve
Let the omelette rest for 2 minutes, then serve with the crispy salmon fingers, salad, garlic herb dip and lemon wedges.
Notes
- Blend the eggs and cottage cheese for a smoother, extra fluffy omelette, or leave it as is for creamy little curds.
- The omelette is done when the center no longer jiggles. Egg dishes are fully cooked at 160°F (71°C).
- Use a ramekin or small baking dish that fits your air fryer basket with some space around it for the hot air to circulate.
- Cooking times for salmon fingers vary by brand and thickness – check the package and make sure the salmon reaches 145°F (63°C).
Why You’ll Love This Air Fryer Cottage Cheese Omelette
Cottage cheese makes the eggs extra creamy and adds a big protein boost without much extra fat. In the air fryer, the cottage cheese omelette puffs up like a mini soufflé and gets lightly golden on top, while the inside stays soft.
Together with the crispy salmon fingers, salad and yogurt dip you get a balanced plate with around 38 g of protein per serving – and you can cook the omelette and salmon side by side in one basket.
Tips for a Fluffy Cottage Cheese Omelette
Blend for a smooth texture. A quick blitz with an immersion blender makes the egg mixture silky and extra light. If you like little creamy curds, simply whisk.
Use a lower temperature. Baking at 330°F (165°C) lets the omelette cook through gently without the top burning.
Check the center. The omelette is ready when it no longer jiggles in the middle. Egg dishes are safely cooked at 160°F (71°C), and fish at 145°F (63°C) – see the safe minimum internal temperatures from FoodSafety.gov.

What Kind of Salmon Fingers to Use
Store-bought frozen breaded salmon fingers are the quickest option and cook perfectly in the air fryer. For homemade ones, cut a skinless salmon fillet into thick strips, dip them in beaten egg and roll them in panko with a little salt, pepper and dill, then air fry at 400°F (200°C) for 8–10 minutes.
Meal Prep and Make-Ahead Tips
You can bake several air fryer cottage cheese omelettes in small ramekins, let them cool and store them in the fridge for up to 3 days. Reheat them in the air fryer at 320°F (160°C) for 4–5 minutes. Make the garlic herb dip ahead as well – it tastes even better after a few hours.
Storage & Reheating
Store leftover air fryer cottage cheese omelette and salmon fingers in an airtight container in the refrigerator for up to 2 days. Reheat the salmon fingers at 380°F (190°C) for 3–4 minutes so they get crispy again. The salad is best served fresh.
Frequently Asked Questions
Can I make the air fryer cottage cheese omelette without a ramekin?
Yes. Use any small oven-safe dish or a silicone mold that fits in your air fryer. A shallower dish will cook faster, so start checking after 10 minutes.
Can I use other vegetables?
Absolutely. Bell peppers, mushrooms, zucchini, spring onions or leftover roasted vegetables all work well. Squeeze watery vegetables dry first.
Can I replace the salmon fingers?
Try fish sticks, chicken tenders, smoked salmon or simply more salad to keep it vegetarian.
Is this recipe gluten-free?
The omelette is naturally gluten-free. For a fully gluten-free plate, use gluten-free salmon fingers or plain air-fried salmon.
What to Serve with This High-Protein Plate
Add a slice of whole grain toast or sourdough for a heartier breakfast, or serve the omelette with avocado slices and extra vegetables for a lighter lunch.
Easy Variations
Feta and olives: Swap the mozzarella for crumbled feta and add a few sliced olives for a Mediterranean version.
Smoked salmon: Stir small pieces of smoked salmon and dill into the egg mixture instead of serving salmon fingers.
Spicy: Add a little more chili flakes and a spoonful of sriracha to the dip.
